Orange Ricotta Pancakes

Creamy, citrusy, slightly sweet and bready without being too heavy.

Ingredients
  • 1.5 oz bourbon (or aged rum for a softer touch)
  • 0.75 oz fresh orange juice
  • 0.5 oz lemon juice
  • 0.75 oz maple syrup (or vanilla syrup for a more "pancake" vibe)
  • 1 tablespoon fresh ricotta
  • 1 dash orange bitters (optional)
  • Egg white (for foam, optional but recommended)
  • Ice
Optional Garnish
  • Orange zest or brĂ»lĂ©ed orange slice
  • Dusting of cinnamon or nutmeg
  • Mini pancake skewer (if you want to go all in)
Instructions
  1. In a shaker, add bourbon, orange juice, lemon juice, syrup, ricotta, and egg white (if using).
  2. Dry shake (without ice) vigorously to emulsify.
  3. Add ice and shake again until well chilled and frothy.
  4. Fine strain into a chilled coupe or rocks glass.
  5. Garnish with orange zest or spice dusting.
